Val de Mer ‘Non Dosé’ Crémant de Bourgogne
Val de Mer is Patrick Piuze’s second winery, co-owned with Moutard-Diligent. Patrick Piuze is an exciting winemaker that is fairly new to the scene. French-Canadian by birth, he originally came to Burgundy to intern for Olivier Leflaive. This relationship quickly led to Piuze becoming Leflaive’s winemaker in Chablis. After working as winemaker for a few more top Chablis producers, Piuze set out on his own in 2008. His winemaking style is defined by his intense reverence for the individual sites of Chablis. His sparkling wine is made entirely from Chardonnay 10 miles outside of Chablis. Aged for 9 months after bottling with zero added sugar, Val de Mer is racy and vibrant, full of chalky minerality, and irresistible.
