Salomon Norwood Shiraz/Cabernet Sauvignon

This wine is from an Austrian-owned winery that surprisingly has deep roots in Australia. The grapes come from the Fleurieu Peninsula, home to small historic villages that dot the region’s rolling hills. The midday heat is balanced by cool afternoon winds rolling off the nearby Southern Ocean. The vineyards on the Fleurieu Peninsula extend south of Adelaide to include McLaren Vale, Adelaide Hills and the Southern Fleurieu Peninsula. The soils are a mix of gravel, glacial sands, and red and orange clay. The wine is fermented in open fermenters for 10 days then transferred into barrels and aged for 12 months in mostly used French oak. The final product artfully blends big, dark fruit flavors with notes of sandalwood, dried herbs and spices, and lifted acidity.
