L’Atzar Cava Reserva Brut Nature NV, Catalonia, Spain
This charming Cava is made in a medium-bodied, lifted style. It is very dry, since there is no dosage. Enjoy aromas and flavors of pears and yellow apples with a touch of white bread. L’Atzar owes its finesse style to being predominantly Paralleda (70%) and only 25% Macabeo and 5% Xarel-lo. It aged 22 months on its lees in bottle. L’Atzar hails from Penedès in Catalunya, and is produced by Mas la Mola, a winery in Priorat. This fine Cava is a terrific aperitivo, and pairs magically with sheep’s milk cheese, crispy fried foods, and egg dishes.
