I Vigneri (Salvo Foti) 2020 Etna Rosso

Salvo Foti is a native of Sicily. He continues to advise such wineries as  Gulfi, Benanti and ViniBiondi, but Salvo wanted his own project to really make a wine that sings. I vigneri is 90% Nerello Mascalese and 10% Nerello Cappuccio,all  organically grown.  This wine is foot trodden and fermented with stalks included in a traditional palmento, which was carved from the local stone. It is then aged underground in terra cotta amphorae for six months. It reflects Salvo’s vision of what a traditional wine was prior to modern technology.
