Filipa Pato is a winegrower in Bairrada. Her philosophy is simple: create authentic wines without makeup. These bottlings express the true nature of the vineyards from which they come. She focuses on biodynamically farming Bairrada’s indigenous grapes: Baga, Bical, Arinto, Cercial and Maria Gomes. In the winery, they gently handle the grapes, with minimal intervention and strict monitoring of the wine, allowing the grapes to express their distinct character.
This Sparkling Wine is a Blanc de Blancs crafted from 88% Bical, 10% Maria Gomes, and 2% Cercial. It was crafted utilizing the classical method. During secondary fermentation in bottle, the wine spends 9 months on its lees prior to disgorgement and a low dosage of less than 2g/L. It presents a yellow hue with fine bubbles. Look for aromas of minerals and pears accented by thyme and honey. On the palate, it is rich and smooth with a creamy mouthfeel. Ripe fruit and toasty bread drive the flavors. It makes a terrific aperitif or serve it with poultry, seafood, and firm cheeses.
