Here’s a terrific example of Soave for you, exhibiting textbook scents of green apple peel, honey, and chamomile. The palate continues these flavors while layering in yellow plum and minerals. Farina’s Soave is a Classico, meaning the vineyards are located in the heart of the Soave DOC, in the original zone prior to its expansion. It is a blend of 85% Garganega and 15 % Trebbiano di Soave and Pinot Bianco. It was vinified entirely in stainless steel. Soave pairs incredibly with rich seafood. Think along the lines of clams and gnocchi, squid ink linguini, scallops, and shrimp risotto.
