Domaine de la Galopière Hautes Côtes de Beaune Blanc 2018

Domaine de la Galopière Hautes Côtes de Beaune Blanc 2018 is quite the find.  Its pale gold hue beckons you to take in layered aromas of lemon curd, yellow apples, and honey.  The generous palate offers up flavors reminiscent of fresh yellow apples, and apple butter intermixed with hazelnuts and toasted almonds.  A balancing acidity and minerals grace the lingering finish.  It is plump and complex for the price with savory tertiary notes from its time in bottle.

The grapes for this Hautes Côtes de Beaune hail from a 1.6 acre plot above the village of Savigny-lès-Beaune. The vines are 50 years old and are planted on well-exposed slopes of clay-limestone soil. following hand harvesting and fermentation by indigenous yeasts, the wine spent a year in 2-4 year old barrels.  Enjoy it with any creamy chicken dish or a slice of Delice de Bourgogne cheese.
