Raoul Gautherin & Fils Chablis 2018
The Gautherin family has long roots in Chablis. Although the domaine was formally founded in the 1950’s by Raoul Gautherin, their family has worked these vineyards for centuries. The family business is now run by Raoul’s son and grandson, Alain and Adrien. Their approach to making great Chablis falls into the “traditionalist” camp: carefully managing small plots of vineyards (16.5 hectares in total) and using very few new oak barrels. The Chablis AOC comes from 9.73 hectares of vines that average 38 years in age. The wine is fermented exclusively in stainless steel but is allowed to rest on the lees for over a year before being bottling. Full of distinctly Chablis minerality with a touch of richness to balance the high-toned acidity, this wine reveals more fruit notes as it opens in the glass or decanter.
