Castelgufo ‘Riserva’ Chianti 2016

The Cerester winery, located just east of Pisa, has focused on growing organic Chianti for three generations. The Castelgufo Chianti Riserva is made from certified organic Sangiovese (80%), Colorino (10%), and Malvasia Nera (10%) vines, set on rocky clay-limestone terroir. ‘Riserva’ in Chianti means the wine needs to be aged for at least 2 years in barrel, and usually is reserved for the best grapes from an estate. Castelgufo ages their riserva for 3 years, further imparting a woody flavor and a savory spice characteristic. Full of dark cherries, cedar, and dried flowers, this is certainly the heavier side of Chianti, but has soft enough tannins to be enjoyed tonight.
