Cellar consulting.

Building a personal cellar, sourcing rare bottles, valuing what you inherited, designing a wine list, or quietly liquidating a collection. Brett works with twenty to thirty clients a year on this.

The shop sells you the wine. This is what we do beyond that.

Personal cellar building.

You want to build a cellar but don’t know where to start, or you have something started and want it to actually go somewhere. We sit down with you, look at your space, your budget, and your drinking habits, and design a cellar around them. Burgundy-heavy, Bordeaux-heavy, Champagne-heavy, mixed; current-drinking, library-aging, gift-ready. Six months in or six years deep.

Most cellars we design are between $15K and $200K of starting inventory. The work is one-time setup plus optional quarterly check-ins to add seasonal allocations and library finds.

Sourcing rare and allocated wine.

If you’re looking for a specific bottle — a vintage Champagne for a 50th anniversary, a Bordeaux for your child’s birth year, a single Grand Cru you’ve been chasing — we have direct importer relationships across France, Italy, and Germany and the auction floor when the importers can’t help. Most rare-bottle sourcing requests close in 2-6 weeks.

Cellar valuation and consignment.

You inherited a cellar. Or you’re consolidating, or moving, or quietly liquidating. We catalog it, value it against current Wine-Searcher and auction comparables, and either purchase outright, list on consignment with major auction houses, or place specific bottles privately with collectors we know are looking. We charge 10-15% on consignment, structured so you make more than you would selling direct to an auction.

Restaurant and event wine programs.

Brett works with several Boulder and Denver restaurants on their wine programs — list curation, staff training, by-the-glass rotation, supplier relationships. If you’re opening a place or refreshing an existing list, this is the work.

For private events, we build custom pours for weddings, milestone birthdays, corporate dinners, and brand activations. Pricing scales with size and complexity; small dinners start around $45 per person for the wine plus a flat sommelier fee.

Pricing.

Cellar consulting starts at $250/hour. Cellar build engagements typically run $1,500-$5,000 for the initial design plus the cost of the wine itself. Valuation is $400 for collections under 200 bottles, more above. Sourcing rare bottles is on consignment — you pay the wine plus our finding fee, no retainer.
