The vineyards on Santorini are like no others. Because fierce winds can whip across the island and there is no rainfall during the growing season, the Assyrtiko (an ancient, native grape variety) vines are trained in low, circular basket forms called ampelies. This unique training style not only offers protection from the wind but also allows the vines to capture moisture from the morning mists - the only source of surface moisture available during the growing season. The often hundred-year-old and more vines are ungrafted. The yields are very low, as the spare soils cannot support large crops.
