For many, the finest Saké quality is the Junmai Daiginjo grade. At least 50% of the rice grains must be polished away to achieve Daiginjo status, and most are quite expensive. One of the BEST BUYS among Junmai Daiginjo bottlings is Mu. Mu Saké is produced by the Yaegaki Brewery, founded in 1666 in Himeji City of Hyogo Prefecture. Premium Yamada Nishiki Saké rice is used, along with underflow water from the Hayashidagawa River, fed upstream by the Shikagatsubo waterfall. This is an exquisitely delicate and refined Saké, emblematic of the Daiginjo style. Wonderful floral, melon, and herbal nuances will intrigue and delight you. It's a super summer sipping Saké.
